KHANDVI - Gram flour and curd rolls ( Street food style )

KHANDVI
(Street food style)



Serves : 4



INGREDIENTS 

1. 100 g Gram flour
2. 120 g Curd
3. 1 tsp sugar
4. salt to taste
5. red chillie powder 
6. Black pepper powder
7. 1/2 tsp turmeric powder
8. 1 tsp garam masala
9. 2 medium sized finely chopped carrots 
10. Finely chopped cabbage
11. Grated coconut
12. Chopped one onion
13. 1tsp mustard seeds
14.  One finely chopped green chillie.

METHOD

1. Mix gram flour, curd, sugar, salt, red chillie powder and turmeric powder in a bowl.



2. Take one glass of water in a pan and add the mixture to it. Turn on the heat and stir it well so as to avoid the formation of lumps in it.


3. Heat it until it forms a semi thick paste.

4. Invert a steel plate and grease it with ghee.

5. Spread the paste on the plate as shown in the picture. Keep this plate in refrigerator for 5-10 minutes.

6. Now for filling material add some oil to a pan. Add mustard seeds.

7. When the mustard seeds start crackling add finely chopped onion to it.

8. When the onion is golden brown add salt to it.

9. Add carrot, Cabbage, green chillie, garam masala, and red chillie powder to it.




10. Mix it well and add black pepper powder to it.

11. Now stir fry the vegetables until they are cooked well.

12. Take the plate out after 5-10 minutes and apply tomato ketchup or tamarind chutney on it.

13. Sprinkle grated coconut and  the filling material. Slice it with a knife as shown.

14. Roll the slices as shown.

15. Garnish it with grated coconut or sesame seeds.

Daal Vada - दाल वडा

Daal Vada - दाल वडा 






Ingredients:


  • 2 cups of Gram dal (चने  की  दाल )
  • 4 whole red chillies ( साबुत लाल मिर्च  )
  • 4 table spoon coriander seeds.  
  • 5-10 curry leaves (करी  पत्ती )
  • Salt (नमक ) (according to your taste)
  • 8 - 10 whole Black pepper (साबुत  काली  मिर्च )
  • An onion
  • coriander leaves










Method:
   1. Soak the  Gram dal in water for 12 hours.

   2. After 12 hours take out the gram dal from water and          grind it coarsely without water 



         3.Grind red chilli (whole), coriander leaves, curry leaves and the black pepper separately.








         4.  Add this mixture of spices, finely chopped onion and coriander leaves to the gram dal paste .





               5. Make small balls of this paste called vadas.





    6.    Deep fry all the vadas on MEDIUM flame until they become light brown.





    7.    Then using a tissue paper squeeze the vadas so that they attain a flat shape.




    8.   Deep fry them again on HIGH flame until they become dark brown and crisp.




                 9.Take dried red chillies ( not powder) and deep fry them as well until they turn maroon in colour. Now sprinkle some salt over these chillies so that the salt sticks all around them.










    Serve the vadas with coriander chutney or  tamarind chutney and crisp, salted red chillies.

    UNDER 15 MINUTE DHOKLA RECIPE


    Guests due in 20 minutes? That's a plenty of time to prepare this super easy and super quick Dhokla in microwave.


    SERVES 4 PEOPLE

    INGREDIENTS FOR DHOKLA 

    1. 100 gram GRAM FLOUR
    2. 1/2 ENO POUCH 
    3. SALT TO TASTE
    4. RED CHILLI POWDER TO TASTE
    5. 1 tsp SUGAR
    6. 1/2 TSP TURMERIC POWDER 



    METHOD

    1. Mix all the given ingredients in a bowl, add water so as to make a thick paste.

    2. Grease the microwave tray with ghee and pour the mixture into it. Now let it cook in the microwave for 7 minutes on medium high. ( my microwave dosen't have a temperature setting option. So to check if it is cooked properly you can insert the knife in the dhokla and check it. If nothing sticks on the knife then the dhokla is ready and if there is the dhokla paste on the knife then you need to cook it more.)

    3.FOR LEMONADE -
    * 50 grams of sugar
    * one and a half lemon.

     Now take half glass of water and dissolve the sugar in it. Add lemon to it. Pour this mixture over the dhokla pieces.


    4. FOR GARNISHING - 

     * 1 TSP GHEE
     * 2 TSP WATER
     * CURRY LEAVES
     * 1 TSP RAI ( BLACK MUSTARD SEEDS )
     * SALT TO TASTE
     * 1/2 TSP DRY MANGO POWDER
     * 1 GREEN CHILLI (SLICED)




      

     Add ghee to a fry pan. When the ghee is warm add rai to it. When the rai start crackling add green chilli, salt, dry mango powder, curry leaves and water order wise and turn off the flame. Pour it over the sliced dhokla.

    5. Serve the dhokla with green chutney or imli chutney. You can prepare green chutney by following the given directions.


    CHUTNEY

    INGREDIENTS 

    1. FRESH CORIANDER
    2. FRESH MINT LEAVES
    3. HALF TOMATO
    4. SALT TO TASTE
    5. 1/2 TSP DRY MANGO POWDER
    6. 1/2 TSP CUMIN SEEDS
         You also can add spring onion or onion or ginger.

     METHOD - Grind all these ingredients in mixer and the chutney is ready.
