EGG LESS COOKER CAKE - Recipe with step wise pictures.

EGG LESS COOKER CAKE






INGREDIENTS


1. 1 Cup Milk Powder
2. 1+1/2 Cup all purpose flour (Maida)
3. 1 Cup Fresh Cream
4. 1 Cup Sugar
5. 1 Table spoon Vanilla essence
6. A pinch of Salt
7. 1 Table Spoon Baking powder
8. 1/2 Table Spoon Baking Soda
9. 1/2 Cup Milk

Method

1. Add sugar and fresh cream to a bowl and mix them well for 5 minutes in one direction. 


2. Take a large plate and Place a sieve over it. Add all purpose flour and milk powder to the sieve. 

3. Add baking powder and cooking soda to it.



4. Now sieve the contents in the plate below.


5. Sieve the mixture 3 times over and over.


6. Now add 4 table spoons of the sieved flour mixture to the cream sugar paste.


MAKE SURE YOU MIX THIS IN ONE DIRECTION. THIS IS EXTREMELY IMPORTANT. ALL THE INGREDIENTS IN THE BOWL SHOULD BE MIXED IN ONE DIRECTION ONLY.

7. Add more flour and also add 1 table spoon of vanilla essence and mix again.

8. Slowly keep adding 4-4 table spoons of flour mixture and mixing it. When the mixture gets too thick to take in some more flour, add a little milk to it. Make sure that the paste does not get too thin, it should be just thin enough to take in more flour. 

This is how thick the paste should be -

9. Add a pinch of salt to this mixture. You can also add it in the beginning, i forgot so i had to add it later on.

10. Now whisk around the beater in one direction for atleast 5 minutes. MAKE SURE THAT YOU WHISK IT AROUND IN ONE DIRECTION ONLY. 

11. Now you need a 5 liter cooker. Pre heat the cooker for 5 minutes on low flame.


You'll need the following arrangement - ( the green shade is due to reflection, ignore it )

12. Grease an aluminium container that fits in the cooker and add the mixture to it.



13. Now put this container in the cooker and close the lid. Make sure to remove the whistle off the cooker lid. 

14. Now let it cook for exact 50 minutes on low flame. After 50 minutes are over don't remove the lid, keep it aside for 20 minutes and let it cool down. You can then remove the lid and take the container out. You have to remove the cake out of the container carefully by banging it loudly upside down on a solid base. Make sure the cake is at room temperature when you take it out of the container or else the cake will break into pieces.






NOTE - YOU DON'T HAVE TO ADD WATER TO THE COOKER.

PAV BHAJI

PAV BHAJI




INGREDIENTS

1. Capsicum - 100g
2.French Bean-100g 
3.Green Chillies -  2
4.pumpkin -150g
5.Cauliflower-150g
6.potato -200g
7.Onion-  100g
8.Tomato-100g
9. Coriander
10.Paneer
11.Butter
12Sugar-1tsp
13.Garam Masala -1tsp

Method

1. Add finely chopped vegetables ( except tomato and onion) , turmeric powder, salt and red chillie powder to pressure cooker and let them cook well.

2. Heat oil in a pan add mustard seeds and let them crackle. Then add ginger garlic paste and onion and salute until light brown.



3. Now add chopped tomatoes, green chillies, turmeric powder, sugar, salt.



4.Now add cooked vegetables to this paste and mix it well. Then add pav bhaji masala ( look for it below the recipe of pav bhaji ) and garam masala to it.
 


5. The vegetables should be properly mashed.


6. Turn off the heat and add butter and lemon juice. Garnish it with chopped coriander leaves and paneer.

7. Serve with pav.

Note - Pumpkin is not usually added to bhaji but since it is a rich source of Vitamin A and children usually avoid it adding it to bhaji makes it taste delicious. You can also add other vegetables like carrot and peas as well.

    
 Pav Bhaji masala
Ingridients


  1. Black salt - 1tbsp
  2. Turmeric powder - 1 tbsp
  3. Cummin seeds - 1/2 tbsp
  4. Table salt - 1 tbsp
  5. Red chillie powder - 2 tbsp
  6. Dry mango powder - 1 tbsp
  7. Aniseed - 2 tbsp
  8. Coriander seeds - 2 tbsp

Method

1. Roast Cummin seeds, aniseed and Coriander seeds in a pan until light brown.

2. Now grind these roasted seeds and the rest of spices in a mixer and pav bhaji masala is ready.

RAJMA MASALA

RAJMA MASALA




 For Half Kg of Rajma.


Ingredients


1. Black pepper (1 tbsp)

2. Cummin Seeds ( 1 tbsp)

3. Kasuri Methi ( 1 tbsp)

4. Dry Mint ( 1 tbsp)

5. Nutmeg (Jaiphal) ( 1 tbsp)

6. Black Salt ( 1 tbsp)

7. Tez patta (4)

8. Dry Ginger powder ( 1 tbsp) (optional)

9. Maze ( javitri ) (1 Small piece )

10. Dry Mango powder ( 1 tbsp)

11. Anardana ( 2 tbsp)

12. Cinnamon  powder ( Daal chini) ( 1 tsp)

13. Cloves (4)

14. Coriander seeds ( 2 tbsp )

15. Dry red chillies ( 3 )

Method 

1. Except Dry ginger powder, Dry Mango powder, cinnamon powder and Black salt, add all other ingredients to the pan and let them roast until they turn light brown.



 2. Now add all other ingredients( including those not added to the pan)  to the mixer and grind them well.

KHANDVI - Gram flour and curd rolls ( Street food style )

KHANDVI
(Street food style)



Serves : 4



INGREDIENTS 

1. 100 g Gram flour
2. 120 g Curd
3. 1 tsp sugar
4. salt to taste
5. red chillie powder 
6. Black pepper powder
7. 1/2 tsp turmeric powder
8. 1 tsp garam masala
9. 2 medium sized finely chopped carrots 
10. Finely chopped cabbage
11. Grated coconut
12. Chopped one onion
13. 1tsp mustard seeds
14.  One finely chopped green chillie.

METHOD

1. Mix gram flour, curd, sugar, salt, red chillie powder and turmeric powder in a bowl.



2. Take one glass of water in a pan and add the mixture to it. Turn on the heat and stir it well so as to avoid the formation of lumps in it.


3. Heat it until it forms a semi thick paste.

4. Invert a steel plate and grease it with ghee.

5. Spread the paste on the plate as shown in the picture. Keep this plate in refrigerator for 5-10 minutes.

6. Now for filling material add some oil to a pan. Add mustard seeds.

7. When the mustard seeds start crackling add finely chopped onion to it.

8. When the onion is golden brown add salt to it.

9. Add carrot, Cabbage, green chillie, garam masala, and red chillie powder to it.




10. Mix it well and add black pepper powder to it.

11. Now stir fry the vegetables until they are cooked well.

12. Take the plate out after 5-10 minutes and apply tomato ketchup or tamarind chutney on it.

13. Sprinkle grated coconut and  the filling material. Slice it with a knife as shown.

14. Roll the slices as shown.

15. Garnish it with grated coconut or sesame seeds.
